ABSTRACT

It has been known for a long time that diet can have a positive or negative effect upon human health. In industrialized countries, a diet based on too much fat is the cause of diseases, such as hypertension and obesity. On the contrary, in developing countries, a poor diet causes serious nutritional deciencies and death. Therefore, in recent years, there has been an increasing interest in food nutrition, with a view to safeguarding health. In fact, consumers are more aware about the link between food and health; this explains the reason for an increasing demand for foods that promote good health, such as functional foods (Peres et al., 2012).
