Chapter Problems associated with organic acid preservation

Although only about 2% of adults and 5% of children have been estimated to be sensitive to foodborne allergens, the number of patients suffering from food allergies has increased dramatically in the last decades, rendering allergic diseases a serious health problem. Changes in eating habits and changes in the environment have been indicated as the main reasons (Hayakawa, Linko, and Linko, 1999). True food allergies are often difcult to diagnose, as similar symptoms are caused by several factors such as food intolerance, seafood toxins, or chemical additives (Furukawa, 1991; Hee, Nordlee, and Taylor, 1996).
