ABSTRACT

Activity of organic acids is mainly inhibitory and not microbicidal, and their even distribution is, therefore, essential to effectively combat contamination. However, suboptimal doses pose a problem by allowing spoilage, very often mold spoilage. In addition to economic losses caused by visible growth of spoilage molds, health hazards associated with mycotoxins are also causing concern (Arroyo, Aldred, and Magan, 2005).
