ABSTRACT
Fats and oils are the organic compounds naturally found in animals and plants (Figure 6.1).
The primary functional properties of fats and oils in food processing can be listed as:
1. Enhancement of flavor and mouth feel: Fats and oils provide a rich flavor and smoother mouth feel that most people find very satisfying.
