Raman scattering (CARS) microscopy in the last decade (Cheng and Xie 2004; Evans and Xie 2008), which allows label-free visualization of lipid droplets, is opening up exciting opportunities to examine the roles of lipid-droplet dynamics in disease development. is book chapter aims to provide a brief summary of lipid-droplet biology and to explore several critical research areas where CARS imaging of lipid-droplet dynamics can shed new light on the mechanisms underlying the correlation between lipid-droplet accumulation and the development of obesity-related health risks.
