ABSTRACT

Freezing is the most traditional method of preserving berries. Most berries can be frozen satisfactorily, with long shelf life and minimal impacts on quality and nutritional loss. However, the quality of the frozen berries will vary with the nature of the fruit, stage of maturity, and the type of freezing method and packaging. Selecting fruit with a firm texture and well-developed flavor, and freezing and storing following appropriate practices are critical to the final product quality.
