ABSTRACT: In this paper, based on MRS medium, the medium and culture conditions for bacteriocin production of Lactobacillus plantarum 153 were optimized, including the temperature, the pH value of the medium, the carbon source and the nitrogen source. The results indicated that when the culture temperature was 30ºC, pH 7.0, the antibacterial activity of bacteriocin produced by Lactobacillus plantarum 153 reached the maximum. Then an orthogonal experiment was used to optimize the concentrations of carbon source and nitrogen source on bacteriocin production of Lactobacillus plantarum 153. Orthogonal experiments indicated that cultured in the medium containing 1% casein peptone, 0.5% beef extract and 3% fructose, the bacteriocin titer produced by Lactobacillus plantarum 153 reached 282.12, which increased 36.5% compared with the control.
