ABSTRACT

ABSTRACT: Flavonoids, a class of vital phytochemicals, are commonly found in fruits, vegetables, soybean and soybean products. It’s necessary to assessment the flavonoids intake when consideration of the relationship between flavonoids and health. This study is intended to estimate the overall flavonoids intake of urban and rural residents in Liaoning Province based on the Nutritional Survey in 2009 in Liaoning Province. The results showed that flavonoids could be detected in all foodstuffs with contents ranged from 1.37 ± 0.59 mg/100 g to 237 ± 1.29 mg/100 g. Among the vegetables detected, soybean and soybean products, and leaf vegetables had higher flavonoids contents. There is no difference between urban and rural residents in terms of vegetable consumption with the data of 365.6 g and 361.5 g respectively. However, compared to urban residents, rural residents consumed less fruits, with only 147.3 g, while the urban 171.4 g. The flavonoids intake by the urban residents reached 188.79 mg, and the rural 166.20 mg. The dominant reason for this difference attributed to the fact that urban residents consumed more soybean and soybean products than rural residents.
