This is an important chapter for those participating in the food ecosystem-suppliers of raw materials, food processors, nutraceutical manufacturers, those who store or transport product, and the food retailer. The food industry is energy and water intensive, both of which are becoming expensive, and in some regions of the world in short supply. Consumers and governments are increasingly concerned about the health of our ecosystem and its sustainability.
