ABSTRACT

In the 19th century station buffets at the local level, and international fairs at the global level, were essential supports for the discovery of new foods and recipes, as well as for the transformation of tastes. Over a very long term, these places of cultural cross-over invite us to rethink the materiality of heritage transmission on different geographical scales. The station buffet is a door to urban identities. The exhibition is a field of competition among nations. But in both of them travellers are also customers. Station buffets and fairs bring innovation while transmitting cultural heritages.
