ABSTRACT

The application of nanotechnology and nanoscience is emergent and possesses innumerous challenges. Nevertheless, many advances have been presented for the industry, especially for the agriculture and food industry. These advances are related to the techniques that can be used on grain conservation, food processing, nutrient preservation, quality control, fraud and adulteration detection, and food safety. Primordial attention must be given to the toxicological effects of the nanostructures, in order to guarantee that there will be no damage for the manipulators, the consumers, and the environment. This chapter address the issue of nanotechnology on grain storing, production, and quality control of cereal-derived products. It also includes the possible toxicological and cytotoxic effects of nanoparticles over the consumer health.
