ABSTRACT

This introduction presents an overview of the key concepts discussed in the subsequent chapters of this book. The book aims to inform readers about the essential aspects of potatoes in the food systems of developing countries. It outlines the major issues that need to be considered in setting priorities and for implementing and assessing the impact of potato programs. The book addresses a number of broad questions to which policymakers and researchers concerned with potatoes in developing countries need answers. The potato is one of the most important food crops in developing countries as well as in developed countries. Policies affecting the potato crop are becoming increasingly important in developing areas. The book utilizes researchers and policymakers to take a closer look at potatoes and other “minor crops” within the food systems of their countries.
