ABSTRACT

During the past decade, there has been increased research and development activity on the post-harvest technology of the Dioscorea yams. There has been little departure to date from traditional yam storage practices in most developing countries. Although the manufacture of various processed products has received some attention, and pilot scale operations to produce dehydrated yam products have been initiated, none is yet in full commercial operation. There is now, however, a much greater knowledge than before of the technological parameters related to yam processing.
