ABSTRACT

In the transformation of agriculture from a subsistence to a market economy, it is necessary to pay attention to the impact of socioeconomic changes on farm women. It is important to identify tasks which are heavy for women and apply technology to alleviate the strain.

Since women process most of the food crops produced in the rural areas, it is desirable for policy makers to plan capital-saving machines to ease the drudgery in their work in order to create and encourage more women in rural areas to participate in food processing ventures and thus help in increasing food available in the market.

The objectives of this paper are:

To investigate the processing of cassava into gari (farina) in some selected villages in Oyo State of Nigeria. In investigating this aspect of gari production, I shall endeavor to look into the problem of introducing a capital-intensive labor-saving machine with a view to comparing it with the traditional way of processing cassava into gari.

To make recommendations on increasing the profit in gari and cassava production.
