ABSTRACT

Peptides, polysaccharides, lipids, chitooligosaccharides, lectins, phlorotannins, pigments, and diterpenes are major bioactive compounds found in marine foods, which may be effectively extracted through techniques like microwave and enzyme assisted extraction, supercritical fluid extraction, etc. This chapter thus provides an insight on specific bioactive compounds present in marine foods and the technological advancements in their extraction. Authors have also discussed health benefits and advantages of these extraction techniques.
