Medical and nutritional studies reveal the effects of ill-advised farming and food processing and presentation. The farmer’s forbears had observed the advantages of preconception nutrition in large samples of newborns. Taste has evolved at its own slow pace in relation to environment and survival. A sweet tooth was once an advantage when richly nutritious fruit and honey were scarce. The basic principle for optimum nutrition is that many nutrients are needed at particular levels of concentration. The body's need of oxygen in plenty calls for protection of cell-tissue from an excess of oxygen ions. The soil in some countries in Europe, New Zealand, and Australia has low levels of selenium, whereas that of North America is high. A mineral attracting attention is selenium, relevant to cardiovascular disorders and mood-effects, among other aspects; Breast-milk has been monitored in relation to selenium intake and supplementation.
