ABSTRACT

Fruits and vegetables are sources of micronutrients and essential in human diet. Waste of food has always remained a matter of concern, as it requires resources and labor to produce. In addition, it has potential to feed big chunk of population as well. Existing technologies with skilled and supervised manpower have potential to reduce the surfeit losses and waste of the fruits and vegetables. This chapter includes conventional technologies as well as recent technologies being used across the world. Farmers, wholesalers, retailers, and consumers all are the stakeholders in postharvest chain of fresh produces. Each section of chapter has managerial suggestions and information for all stakeholders to improve quality and shelf life of agricultural fresh produces. Lack of consumer awareness and unskilled labor in postharvest chain are the major issues in menace of postharvest losses. Emphasis has also been given for awareness program, training, and skill development to inculcate a right protocol to follow by stakeholders under postharvest chain of fresh produces.
