Ascorbic acid is one of several additives which may be present in soft drinks, and its determination may be complicated by the presence of these other additives as well as by various colored compounds in the drinks. Sorbic acid and potassium sorbate tested negative in a variety of in vivo and in vitro genotoxicity assays. Effects of ascorbic acid and curcumin on quercetin-induced DNA damage, lipid peroxidation, and protein degradation were investigated in rat liver nuclei under aerobic conditions in the presence of equimolar concentrations of iron or copper. In addition to its promoting effects for rat bladder tumors, it has been suggested that ascorbic acid, which is metabolized to oxalate, may have a role in the development of calcium oxalate lithogenesis. Kojic acid, an antibacterial metabolite produced by some species of Penicillium and Aspergillus , is used as a food additive to prevent enzymatic browning due to polyphenol oxidase.
