ABSTRACT

Considerable attention has been paid by most governments to ensuring that consumers have information on how to minimize the possibilities of foodborne disease occurring in the home. The use of food irradiation has been shown to be extremely effective in decreasing our exposure and risk to offending foodborne pathogens. Another good example of the application of food irradiation is the processing of seafood. Some of the most beautiful and delicious seafoods in the world come from Southeast Asia. Thus, products such as poultry or seafood would first be packaged and then irradiated. The modern production of poultry starts at the farm or chicken house with either eggs or chicks, both of which may be contaminated. Very large-scale tests were carried out at kitchen level to determine the effects of both irradiated poultry and spices on the overall hygienic quality of the finished foods. Herbs and spices provide another good example of the application of food irradiation.
