ABSTRACT

In this chapter we have sought to emphasize new discoveries and insights which have been made since the first edition of the book was published. This is most apparent in the section on transporters, especially hexose transporters which are now recognized as being of major importance in setting the overall catabolic rate. However, we also felt obliged to re-state the basic elements and cellular raisons d’etre of the individual pathways for the benefit of those readers who are new to yeast and/or its carbon metabolism. Saccharomyces cerevisiae is able to grow on a wide range of carbon compounds but glucose is the preferred substrate and a truly amazing set of controls exists to ensure the efficient metabolism of this compound.
