ABSTRACT

There are three sets of reading directly on the topic: • the studies of catering students; • research on restaurants; • studies of private vocational training. The starting point on catering students will be Riseborough (1993a) on BTEC catering students at a state-funded tertiary college in a city in the north of England and Fine’s (1985, 1996) study of catering trainees in Minneapolis. There is Gleeson and Mardle (1980) on a further education college, while Geer (1972) is a collection of papers on vocational training. However, beyond the academic literature, it would be highly relevant to read Tom Sharpe’s (1978) comic novel Wilt, in which the hero is struggling to teach liberal studies to trainee butchers and plumbers.
