ABSTRACT
The rate at which a particular enzyme forms its product is dependent on a number of factors, in addition to the quantity and intrinsic optimal function of the enzyme itself (pH, temperature, etc.) and the substrate concentration. These are now considered and for easy reference are listed in Table 18.19. The quantity of enzyme and the substrate concentration have been discussed above.
