You might be obliged to work on a Sunday in order to serve your customers, but your staff can, in certain circumstances, opt out. The law allows people to opt out of any normal requirement for Sunday working. It does not, however, seem to allow them to stipulate freely from the outset (that is, at their job interview) that they

are unwilling to work on a Sunday: opting-out comes later. Do, however, ask your interviewees if they are willing to work on a Sunday. If they say no, go on to the next candidate.
