ABSTRACT
This chapter commences by making a distinction between ‘scientific uncertainty’ and ‘regulatory uncertainty’. The distinction is not mere sophistry. Instead, as the case study on the regulation of foodstuffs in France readily demonstrates, it is important to always bear both of these concepts in mind, since regulatory uncertainty (within the institutions of foodstuffs regulation) appears also to have a corresponding effect upon the severity of impact of cases of scientific uncertainty.
