[Note: This article is a conversation among four sources—Ed Romero, Dan Gonzales, Max Millard, and Salve Millard. As the article emerged over the course of several years, our editor, George Leonard, was struck by the diversity of interpretations and definitions. He chose this form to preserve that diversity. Readers encountering Filipinol iterature should be aware how various Filipino experience has been—all those islands, all those dialects, and all those classes and ethnicities grouped under one political heading. There are no unanimous opinions about anything, induding cuisine. If a term appears in more dialects than Tagalog, that is noted. If a source had a special comment, or strongly dissenting opinion, that is noted too.]
