ABSTRACT
Ideas concerning the Middle Ages are, unfortunately, longstanding, and it is very diffi cult to unencumber ourselves of their infl uence. There is one among them that has lasted a very long time and is held with relatively little justifi cation: it concerns cuisine, considered for a long time as veritable hog’s swill. We have as primary examples three opinions, written many years apart, but which together prove signifi cant.
