ABSTRACT

Previous chapters of this book have traced the evolution in thinking about food security from an exclusive focus on food production and the availability of food at the national and global levels (Chapter 3) through concerns about affordability of food and the livelihoods of people (Chapter 4). More recently, the emphasis of research and the concerns of policy makers relate to issues of food utilisation and the ability of individuals and households to use the food that is available and affordable to provide the nutrients needed for healthy growth and development and an active and productive life (Chapter 5).
