ABSTRACT
In this chapter, we apply what we have learned about structure and polarity in order to understand how medicinally active molecules can be isolated from plants. Then, we briefly consider the methods scientists use to identify and analyze medicinal molecules. Finally, we discuss the chemistry behind the functioning of antioxidants, an important class of chemicals which contributes significantly to human health.
