ABSTRACT

The supply of milk to Indian cities is known to be at present in a very unsatisfactory condition. Whether looked at from the point of view of the healthiness of the milk obtainable, or of the quality of the milk to be had, or of the quantity available. The cost of milk is very high: anything which would increase the price, even though it made the supply a better one, would but increase the difficulty of getting it to those people of the poorer classes who are at present suffering most from the present conditions. The animals which are used for milk supply are subject to defects both in the case of cows and buffaloes. The amount of milk produced by the animals used is very small for the amount of food consumed. The milk produced outside is transported to the cities in the crudest, the most expensive and almost the most insanitary manner possible.
