ABSTRACT

The paper considers technology and scale choice in milk processing in Kenya - specifically in an area remote from large-scale processing facilities. Raw material deterioration is of paramount concern, together with insertion of modern small-scale technology into the established market structure. UHT (ultra high temperature) treatment significantly increases the shelf life of processed milk over raw milk, but ‘diseconomies of small-scale’ associated with miniaturising the modern technology endangers economic viability by comparison with larger scale plants using the same technology type. The small-scale modern technology is therefore in danger of Jailing between two stools’.
