ABSTRACT

Daily milk is pasteurized and has a fat content variation of 0 to 3.5 per cent. Cheese can be made from raw milk or from skimmed milk. The dairy industry is currently evolving quickly, diversifying into making new, higher value products in addition to processing traditional dairy products. The company was formed in 1965 by four local dairy cooperatives. It was reconstituted as a joint venture with a large British dairy in 1968. The firm produces skim milk powder, butter, cheddar and low fat cheese together with a range of innovative products. These include mozzarella cheese, with production commencing in 1994, high quality neutral spirit from the fermentation and distillation of lactose, and food ingredients. The firm uses a variety of chemicals for plant washing and waste treatment. These include sodium hypochlorite, sodium hydroxide, sulphuric acid and nitric acid. Sulphuric acid and lime are used to precipitate minerals, in particular calcium and phosphorus, from the post-distillation alcohol plant effluent.
