ABSTRACT

222Coffee is one of the most significant foods in the world. Therefore, the coffee by-products (pulp, silverskin, and husk) offer great opportunities to be used as substrate for bioprocesses, as feed for animals, organic fertilizer, organics acids, thickener, flavors and aroma compounds, productions of molds and yeast, in the growth of larvae and worms but mainly have a potential use as a source of bioactive compounds. These compounds may improve health, and their use as ingredients of functional foods leads to give added value and to reduce contamination. Coffee wastes have potential to innovate strategies applied in industrial scale processes.
