The drink industries are very evenly distributed throughout the country, although there are marked regional concentrations such as that of whisky distilling in Scotland and of beer brewing in Burton-on-Trent, and in the Manchester and Liverpool districts where the quality of the local water is particularly suitable. Malting is the process of steeping barley and other grains so that they germinate. Malting is partly carried on as a separate trade and partly done in or near to breweries and distilleries. Breweries commonly maintain bottling stores near to the centre of the group of public houses and hotels they serve. Gin, whisky and industrial alcohol are all made by similar processes. The basic material may be the starches of cereals or potatoes, sugar or sugar molasses. The waste from small distilleries in rural areas can be used as a fertilizer by irrigating it over the surrounding land and the solid waste can be fed to farm animals.
