ABSTRACT

Botulism is a neuroparalytic disease caused by toxigenic strains of Clostridium botulinum. Although the number of botulism cases and the mortality rate have decreased in recent years, botulism still remains a significant public health hazard. Four clinical forms of botulism are currently recognized, i.e., foodborne, infant, wound, and unclassified botulism (see Chapter 1). In this chapter, the discussion will concentrate on the control of foodborne botulism.
