The consumption of meat by humans can be traced back into antiquity. However, the meat processing sector has been slow to adopt new technologies. The traditional practices of slaughter and dressing of bovines are labor intensive and therefore and substantial cost to the conversion of the live animal to meat. The exsanguination module permits exsanguination to be carried out automatically. The neck of the stunned animal is fully stretched by the automatic rotation of the neck bails of the lead-up, restraint, and stunning module. The carcass is conveyed from the horn and hoof removal module to the bed dressing module, where it is automatically rolled from the prone to supine position and located in a cradle. The overhead conveyor transports the carcass from the park station to the pubic symphysis module. The objective of the sheep evisceration system is to maximize the efficiency of the entire offal removal and handling system and to improve the hygiene and product quality aspects.
