ABSTRACT

This chapter focuses on the provision of kosher and halal food in public institutions such as schools, hospitals and airlines. Kosher and halal food is available in public institutions in many Western countries. For example, in areas of the UK with a high Jewish or Muslim population our research suggests that many mainstream schools and hospitals provide kosher and halal meals alongside other specialist dietary requirements. An increasing number of airlines and airports provide kosher and halal food for passengers and travellers. The airline industry is by definition multicultural, flying tourists and business people around the globe from one destination to another. In the United States eight major airlines, including American and Continental, sell Orthodox Union (OU)-certified kosher food on board.
