Recent innovations in food processing technology have advanced the quality of food products significantly. Nanotechnology is at the forefront of these innovations. Diets today are more focused on healthy, safe, elegant, and tasty food. Flavor is an important consideration in this process. Flavor technology can help take food products to new levels of performance and appeal, which attract consumers. Flavor nanotechnology is an emerging area of interest in the food industry that is changing what we taste and eat. This chapter reviews recent trends in flavor nanotechnology and their applications in the food industry.
