ABSTRACT

Chapter 2 links the reasons why the hospitality industry could serve as a catalyst for achieving sustainable development of our societies to the topics of energy management, waste management, water management, sustainable food and drinks, and building (materials and furnishing). It further builds on the rationale presented in the first chapter of this book by highlighting why some hospitality businesses and professionals to date find it difficult to apply a progressive approach to dealing with sustainability, but also by arguing that some of these barriers are based on overcomplicating matters. Most hospitality companies could do (a lot) more, from a sustainable development perspective, than they currently dare or choose to do. The chapter concludes with explaining that pursuing sustainable development, as a hospitality business or professional, need not always be complicated or involve huge investments. Rather, it represents a choice and requires a focus on people instead of technology.
