ABSTRACT
226Molecular approach like genetic engineering is being explored. One of the approaches is to silence or modify the genes of specific allergenic proteins. However, genetic engineering is regarded as a complex process as milk contains lot of allergenic proteins, and each protein exhibits multiple allergenic epitopes. No food allergen has been removed completely by genetic methods but efforts are going on worldwide. This chapter presented concepts of lactose intolerance and milk allergy.
