ABSTRACT

76Kulfi is a traditional frozen dairy product of Indian origin prepared by concentrating milk with added sugar, fruits, nuts, flavors, and colors. It is very palatable and nutritious like icecream. Since its inception, the product has been mostly prepared and sold by small-scale street vendors. The physicochemical, microbiological, and sensory qualities of the product vary widely due to different production methods, product formulations, and compositional variation in the ingredients used by the producers. However, because of the huge demand, a few systematic studies were conducted for establishing standard protocol for the product and the production method.
