ABSTRACT

134Sprayand freeze-drying is used to produce a wide range of products including heat sensitive materials. The products produced by spray-drying include: pharmaceutical, such as antibiotics, analgesics, vaccines, vitamins, and catalysts; and foods such as milk and milk products, food color, food supplement, soup mixes, spice and herb extracts, coffee, tea, and sweetener. Spray-dried food products are appealing, retain nutritional qualities, and are convenient to consume. Drying method affects the properties of milk powder such as its solubility in cold water, its flavor, nutrient content, and its bulk density. Functional properties of milk powder can be manipulated by specific heat treatment and are discussed in detail in present chapter.
