ABSTRACT

We use as many herbs and spices as possible and use a wide variety of multicultural ingredients. We use fresh herbs such as coriander, parsley, fenugreek, mint, dill, chives and oregano; many of these are grown at Redcliffe or on our allotment. We use spices such as cumin, coriander and mustard seeds, ground cinnamon, ginger, turmeric and paprika but we choose not to use chilli powder in case of accidents.
