ABSTRACT

This chapter presents innovative approach for waste management in fruits and vegetables. Food manufacturer should consider this field as a secondary industry for the utilization of food waste. The wastes generated in food processing industries are often left unutilized due to unavailability of required methods and technology. The waste generated cannot be regarded as throw off-material but could have become the substitute of increasing the current volume of raw materials. The techniques of recycling and reprocessing can bring out the potential to utilize the food waste into some useful way. Temperature helps in the biological activity in the process of decomposition. The pH for high quality compost ranges from 6 to 8. The CNR should be controlled to get optimum pH value. Moisture is essential in the formation of compost. Therefore, optimal moisture is necessary important throughout the process. Vermicomposting, worms play a major role in producing good quality compost. For this purpose, different types of holding equipment like bins are used.
