ABSTRACT

In a context of giving a background to food and drink tourism, Chapter 1 described key relevant entities to food and drink and culture in the past, and those coming forward to be influential now. This chapter will pick up upon and pursue the dimensions that seem to be bringing food and drink as direct objects of leisure and to occupy a role as destination in tourism. Chapters 3 and 4 will consider food and drink tourism’s arrival and causes of appearance in more detail and focus on the particular perspectives of, respectively, the tourist, and the provider with their stakeholders.
