ABSTRACT

Having estimated the volume of wheat bread consumed, the last step is to consider value.

Market forces both magnified and moderated the price effects of variable domestic harvests (as described in Section 8.1). And various questions arise when estimating the value of wheat bread (Section 8.2), and in attempting to put a value on bread made of other grains (Section 8.3). The new estimates of the volume and value of bread consumption are brought together and summarized in Section 8.4, the British Bread Table.
