ABSTRACT

Batch bread was, of course, only one of the forms of wheat consumption. An amount of marketed wheat was used for products other than food — and of the categories of wheat food, to batch bread should be added: fancy breads, such as cottage loaves and many regional specialities, some containing milk or sprinkled with seeds (all of which were exempt from assize1); morning goods such as rolls, crumpets and muffins; sweet pastries and confections, including ginger­ bread and cakes; biscuits (largely ships’ biscuits) and savoury pastries such as used for pies and puddings.
