ABSTRACT

The art of preserving fruits in sugar, or vinegar, being unknown to the Hindus, all the preserves procurable in the Bazárs of the East are made by the Mussulmán Halwáí, who, however, destroys, by too many spices and by excess of sugar, the natural flavour of the fruit. It is astonishing how fond the lower classes of Muhammadans are of sweets, consuming heaps of the common confectionery without hesitation and without injury, whilst a surfeit of them never makes the least difference in the quantity of food afterwards taken. The Halwáí is an especial favourite with youths, who are as fond of spending a few coppers on a holiday in his shop as any English schoolboy.
