ABSTRACT

This book has described the myriad ways in which the government through various public policy instruments has influenced the American food supply and the demand for that food by consumers. In this final chapter, we review what each of the chapters and case studies (devoted to a particular section of the food system) has revealed as well as the cross-cutting themes that have emerged through this analysis. Finally, we offer some conclusions about the effectiveness of current policies and propose means by which a more health-focused food policy can be developed iu this country.
