ABSTRACT

In healthy individuals, there is an equilibrium between the natural antioxidative defense system and the reactive oxygen species (ROS), generated from both living organisms and exogenous sources. When the equilibrium is disrupted, the ROS can induce oxidative and cause cellular damages to various biomolecules. Free radicals not only cause human disease but also cause lipid oxidation in food system. Fractionation of the methanol extract was done by solvent-solvent partition. The methanol soluble fraction was filtered and collected. Fourier transform infrared spectroscopy is one of the powerful analytical techniques which offer the possibility of chemical identification. The technique is based on the simple fact that chemical substance shows selective absorption in infrared region. The reducing power of a compound serves as a significant indicator of its antioxidant activity. Reducing power is a potent antioxidant defense mechanism. The extracts from fruit residues hold promise in the food industry as sources of bioactive compounds.
