The major reason of the Industrial Revolution was the rise of population. It has led to an increase in the number of inhabitants, the result of which also grew market needs. Manner of food production changed and demand on it increased. In order to adapt to market needs in nineteenth century appeared packaging for food. Packaging design has become so popular and profitable that the resulting separate fields of study deal only packaging design. In connection with numerous disadvantages of plastic producers, scientists have begun to search for packaging material, which would be able to replace it. The most popular polysaccharides are: alginate, carrageenan, chitosan, cellulose with its derivatives, pectin, pullulan and gellan gums and starch Polysaccharides' films and coatings have good barrier properties to oxygen, carbon dioxide and other gases. With increasing population, the gross domestic product and the consumption are increasing.
